Chicken Limone – Antonina Grigolo
Antonina Grigolo is the Godchild of Dominic Calarco
Four Skinless/boneless chicken breast cut in half and pounded to equal thickness/dredge in flour
1 cup of sliced fresh mushrooms
1 cup of white wine of your choosing
2 cloves of garlic chopped
1 1/2 cups of chicken broth
A handful of Italian parsley
1/3 cup of freshly squeezed lemon juice.
1 tablespoon of butter ( optional )
Dredge breasts in Flour and fry till light brown
Remove from pan,
sauté garlic in drippings (Do not burn)
Add wine to deglaze
Place breast back into fry pan
Add broth and mushrooms
Let cook at low/medium until mushrooms are just about done, I like them a little undercooked.
Add the lemon juice in at the end, garnish with parsley.
Take the pan off the heat and add the butter.
Tip: You may also add salt to the flour before you fry them, but I think the salt in the broth is enough
You may also thinly slice lemons for garnish.
